Tender BBQ Ribs

When I make Ribs I like to use a dry rub. I will rub my ribs the night before I am going to cook them. When the ribs have been rubbed I set them on a sheet of foil on a baking sheet with a small amount of sliced onion and a couple of cloves of garlic sliced. I put my ribs in the fridge over night in the wrapped in the foil and the next day I bake my ribs for 4 hours at 225 degrees. When the ribs have finished baking I open the foil the ribs have been baking wrapped in and remove the onion and garlic slices. I allow my ribs to cool till the are just cool enough to handle. I will then take my ribs and put them on the bbq and brush them with bbq sauce. I keep them on the bbq just long enough that they get nice grill marks and a nice brown bbq color. The rub recipe I use is as follows.

1 cup light brown sugar
1 tsp paprika
1/2 tsp black pepper
1/2 tsp garlic salt
1/2 tsp old bay seasoning
1/4 tsp curry powder

I Will occasionally add more paprika depending on how hot I want my ribs to be. If you get a decent pork spare rib or a baby back style rib they should be falling off the bone tender by the time you are done cooking. This is one of my family's favorite meals.
